Thanks for the excellent write-up.  You will be one of the survivors who is also a thriver and will do it as a Renaissance man to boot.  And FWIW, if you want to wax philosophical here about your experience, I for one would be interested in hearing your thoughts.  You have a lot to offer, not only in terms of content but also in terms of writing skill and perspective.

I missed my opportunity recently to participate in a local session of chicken processing and your post makes me wish I hadn’t.  Other things had a higher priority at the time though and I made the right choice.

I’m going to be repeating my lamb slaughtering experience in a few weeks and I’m coming back with some improved tools this year and … Kevlar gloves.;-)  I didn’t do much damage last year but even a nick is something you’d rather not have when doing this type of work.
