Pruning angst

I am paralyzed with indecision regarding pruning my fruit trees (apple, pear, plum, peach).  This is their second year.

I understand the “central leader” method other than I am not sure about thinning/tipping the lateral branches.

I am anxious about pruning the peach/plum into the “open vase”.

This year I will be ok with working on the lateral branches to produce new growth for next year’s crop.  I will put off the major work on the peach/plum until next winter.

Does anyone have a source for CLEAR, comprehensive instruction in this area?
