    Dehydrating apples


I got the Excaliber for Christmas as well.  So far the best results were apples.  We got a big basket of Jonagold from a local fruit farm that I guess uses N2 storage.  The apples were still very nice and firm.  The first batch was so good that we bought another basket.  Filled up all nine trays 3 times.  Cored and sliced the apples about 1/4 inch thick.  Dipped slices in “Fruit Fresh” solution as they were sliced.  Dried at 135 F for about 8 hours.  Used a mandoline slicer – watch finger tips!  Leftover bits that we didn’t want to dry went into some pies.

Yield was 66 oz. of dried apple slices plus 5 pies.  We are eating the dried apples like candy.  They are really good.  Texture is better than what we have bought commercially.  Also tried bananas.  Came out well, but I wish we had sliced them a bit thicker, about 3/16″ or so.
